Description: Ranges from creamy and mild to harder and sharper depending upon when it is made during the year. Changes much more drastically than any of the other cheeses.
Named after the Great Black Swamp in northwest Ohio. This swamp at one time covered approximately 3 million acres.
Herb & Garlic

For the Italian food fans. Made with a jack cheese and flavored with turkish oregano, basil, marjoram, thyme and cracked rosemary. This is a wonderful cheese to put on pizza and melt.

Lock 21

Description: Slight mushroomy taste with a wonderful earthly overtone.

On any canal there is a series of locks that makes the canal work. Just 2 1/2 miles from the farm there is Lock #21. This cheese was a creation of the cheesemaker one day. What resulted was a white rinded cheese, that has a slight mushroom taste with a wonderful earthly overtone. This is a seasonal cheese that is made only when the cows are on pasture.
Charloe

Description: This cheese is a washed rind cheese thats aroma is earthy along with toasted peanuts. Smooth and creamy with hints of toasted peanuts.

Named for the little town of Charloe. This town was a boom town during the canal era. It was also home to the Charloe Indians and housed the counties first court house.
Mule Skinner

The Mule Skinner was the one that was in charge of the mules that pulled the canal boats. Most may think of a mule skinner as someone who was mean, crude, and not very lovable. In reality the mules that they tended to where their family, they loved them and cared for them.
Chouda

How can one even think of a name for a cheese like chouda. Well imagine a cheese that has the feel of a creamy gouda with a cheddar overtone. What started out as one style of cheese turned into a wonderful oops!
Burr Oak
Type patterned after: Hard Grating Cheese
Aged: at least 1 year

Description: Nutty, Wild grapes, Yeasty, with a little sweet to the finish
Availability*: First come first serve, May and September
Grate this over any dish and enjoy. We are now producing two batches a year of this wonderful cheese. One in May and the other in September. Reserve yours today as it goes fast.

All Year: We try as hard as we can to make sure that we have some all the time but there may be times when it is not aged enough to cut.
Seasonally: Are only made when the cows are out in the pastures. Usually theses cheeses will be ready by mid to late May and continue untill they are sold out in early Winter
First come first serve: Only one batch a year is made. The month listed is when the cheese will be cut and ready. Once it is sold out after that date that is it until we cut the next batch.
